Delicious Curried Flavoured Stuffed Chicken Breast with Coconut Sauce

Ingredients
3 Chicken Breast
2 Tea Spoon Grated Garlic
2 Table Spoon Chives
1 Bottle Chief Green Seasoning
1 Tea Spoon Chief Curry Powder
1 Tea Spoon Table Salt
1 Tea Spoon Chief Black Pepper
1 1/2 Tea Spoon Chief Paprika
1 1/2 Tea Spoon Olive Oil
1/2 Small Chopped Onions
1 Egg
1 Tea Spoon Fresh Rosemary
Coconut Sauce
3 Tea Spoon Grated Garlic
1 Cup Coconut Milk
1/2 Cup Chopped Onion
1/2 Cup Chopped Bell Pepper
1 Tea Spoon Olive Oil
1 1/2 Tea Spoon Chief Curry Powder
Method
Cut 2” deep pockets into 2 chicken breasts
Season all chicken breasts with garlic, Chief Green Seasoning, chives, salt, black pepper, paprika, olive oil and Chief Curry Powder. Set aside for 15 minutes
Finely dice 3rd chicken breast. Add chopped onions, chives, garlic, Chief paprika, salt, rosemary and egg. Stir well
Fill each pocket with the diced chicken breast mixture
Place in a single layer on a greased baking tray. Bake at 325⁰F for 25 minutes or until cooked
In a pot, combine garlic, coconut milk, onion, bell pepper, olive oil and chief curry powder.
Simmer on low to medium heat for 10 minutes stirring occasionally
