Ingredients and Method

Ingredients

  • 2lbs Irish Potatoes
  • 1 1/2 Tea Spoon Chief All-Purpose Seasoning
  • 1 Small Onion Chopped
  • 1 Large Bell Pepper Chopped
  • 2 Table Spoon Chives Chopped
  • 1lb Boneless Saltfish
  • 1 1/4 Cup Counter Flour
  • 3 Eggs
  • 1/4 Cup Breadcrumbs
  • 1/4 Cup Dutch Lady Full Cream Milk
  • 1 Tea Spoon Table Salt
  • 1 Tea Spoon Chief Black Pepper
  • 1 Bottle Vegetable Oil For Frying

Method

  1. Peel and dice potatoes. Let boil until soft in seasoned water
  2. Crush potatoes and add chopped onions, and chives
  3. Boil saltfish until cooked
  4. Add crushed potatoes to the saltfish. Add chopped onions, chives, bell pepper, ¼ cup flour, salt, pepper and 2 eggs.
  5. Mix thoroughly with hands
  6. Add ½ cup breadcrumbs and continue to mix with hands
  7. Form into croquette shape and set aside
  8. Prepare dipping mixture by combining 1 egg, milk, salt and pepper
  9. Coat each croquette with seasoned flour, dip in mixture then coat in remaining breadcrumbs
  10. Deep fry until golden brown
